Bread And Banana Pudding With Butterscotch Sauce
Layered banana is delicious in this favourite pudding. The sauce is a naughty but nice addition.
This is a great, tempting and comforting dessert and is low FODMAP, gluten, lactose free.

Serves: 8 generous portions
Ingredients
For the pudding
4 slices bread, toasted (gluten free if required)
2 eggs
2 cups milk (lactose free if required)
1/2 cup brown sugar, lightly packed
1 tsp cinnamon
1 ripe banana, mashed
4 tbsp butter (Nuttelex if lactose free)
2 bananas, sliced
1 tbsp cornflour
For the butterscotch sauce
3 tbsp butter (Nuttelelx if lactose free)
2/3 cup brown sugar
1 cup milk (lactose free if required)
Method
Preheat the oven to 180 degrees.
Beat the eggs, milk, brown sugar, cinnamon and mashed banana to combine.

Butter the toast on both sides, cut into 4 triangles and lay half at the bottom of a rectangular baking dish. I used a 23 cm x 15 cm dish as I wanted a thick pudding but a large dish would work.
Spread half of the banana slices over the toast triangles.
Layer the remaining toast triangles and spread the banana on top.

Combine the cornflour with 1/4 cup of egg mixture and stir into the egg mixture. Pour over the bread and banana. Leave to soak for 20 minutes.
Bake for 35 - 40 minutes until golden brown.
When ready to serve, melt the butter and sugar in a saucepan on medium heat.
Once the sugar has dissolved whisk the milk and bring to a boil.
Reduce to simmer for 5 - 6 minutes until thick.
To serve, slice the bread and butter pudding and pour on the sauce.
