Bread Pulau is a tasty and easy breakfast you can make. You can add the vegetables of your choice.This is a very healthy recipe.
I used ghee to fry the bread and avocado oil to saute the vegetables. You can use any cooking oil you want.

Makes: 2 servings
Ingredients
5 bread slices
2 tbsp ghee (clarified butter)
1 tbsp avocado oil
1/2 cup onion chopped
1/2 cup zucchini chopped
1/4 cup spring onion chopped
1/4 cup tomato chopped
2 green chilli sliced lengthwise
1 tbsp tomato ketchup
1/4 tsp mustard sauce
1 tsp dried parsley leaves
Curry leaves
Salt as required
Method
Cut the bread into small pieces. Heat ghee in a pan. Fry the bread pieces in hot ghee for 3-4 minutes on medium heat. Transfer the fried bread into a plate.
In the same pan, heat the avocado oil. Saute the onion for 2 minutes on medium heat. Then add the curry leaves, green chilli, spring onion and zucchini. Stir and cook for 2 minutes.
Now add the tomato, dried parsley, ketchup, mustard sauce and salt. Mix well and cook for 2 minutes.
Then add the fried bread into the cooked vegetables and mix well until combined. Cook for 1 minute.
The bread pulau is ready. Serve hot.
