Breakfast - Brunch Ideas No. 3 - Eggs and Oysters

OK - eggs and oysters? Strange combination?

I did not use fresh oysters for this as I wanted the smoked flavour of the tinned ones, and although it sounds weird, these were delicious, and once again a bit different for Sunday breakfast or brunch.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 1 - 2 servings

2 crumpets - I used wholemeal ones
30 g butter
3 eggs
Bit of cream or milk (optional)
60 g smoked oysters from can, drained
tbsp chives, chopped finely

Add the salt, pepper, cream or milk to the eggs and beat.


Toast the crumpets either in a toaster or under the grill.

Meanwhile, melt the butter in a small pan and add the eggs.

Add a bit of salt and some pepper to taste.

Stir over a gentle heat till the egg starts to thicken - about 1 minute.


Stir the drained oysters into the scrambled egg -you can cut them in half if you want to.

Add the chives and cook another minute or so until the oysters are warmed through. Try not to overcook the eggs as they become dry.


Put this egg mixture on top of the crumpets and serve immediately.
