Breakfast Crepes with Mango

I started off making this a real easy recipe and bought pancake mix, but did not read the instructions and I had to throw the pancakes out!

Making pancake mix is however, very easy, so although we ate late, it was delicious!

Preparation Time: 20 minutes
Cooking Time: 20 minutes
Serves: 4 (8 crepes)

Ingredients
1 cup plain flour
2 small eggs
½ cup milk
½ cup water
¼ tsp salt
2 tbsp butter
2 Mangoes
Strawberries
Cream (optional)

Method
  • In a large bowl, mix together the flour and eggs.

  • Gradually add in the milk and water, stirring to combine. Add the salt and melted butter, and beat until smooth.

  • Heat a lightly oiled frying pan over medium high heat and pour the batter into the pan, using approximately 1/4 cup for each crepe.

  • Tilt the pan with a circular motion so that the batter coats the surface evenly.


  • Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.

  • Mash or cut the mangoes, and put some on each crepe. You can also put some strawberries and cream inside, and fold it over in half.


  • Or put the filling on the side if you are going to roll the crepes.


  • Add some more fruit on the top for decoration, some cream (optional), and serve.
