Breakfast Pancakes
How many weekends do I get pestered for pancakes. They are a simple and easy dish that my kids love. On a Sunday morning I can hardly keep up, as soon as I cook them, they're being consumed.
They can be accompanied by bacon and maple syrup for a great breakfast, or for a simple, elegant dessert add fresh berries, whipped cream or ice cream. We eat them with butter and maple syrup.

Preparation Time: 5 minutes
Cooking Time: 2 minutes per batch
Makes: 20 -30 depending on size
Ingredients
2 cups self raising flour
1 egg
2 cups milk
1/4 tsp. vanilla extract (optional)
2 tbsp. sugar (optional)
Method
Place the flour and sugar, if using, in a mixing bowl and combine.
Make a well in the centre and add the vanilla, egg and 3/4 of the milk. Combine the ingredients with a whisk and mix to a smooth batter.
Check the consistency of the batter, it should be thick but runny enough to fall off a spoon in a consistent stream but not too drippy. Correct consistency with remaining milk.
Heat a non stick pan and spray with vegetable oil. Drop some batter into the pan to make desired size.
When bubbles appear on the top of the pancakes, flip them over and continue to cook. Pancakes should be light and fluffy. Adjust the heat under the pan so pancakes cook evenly without burning but are still cooked through.
*Serve with desired topping and extras.
