Now that the cold weather is upon us, this is a great, healthy recipe to make for breakfast.
It is also a great as a dessert, with a dob of cream, maple syrup or ice cream on it.
Save time by making it for breakfast and keeping the rest for another day for sweets.
Preparation Time: 2 minutes
Cooking Time: 10 minutes
Makes: 2 servings
Ingredients
3 - 4 cups full cream milk
4 - 5 tbsp
semolina
Dob of butter
Sultanas
Sweetener
Method
Bring the milk almost to the boil.
Add the semolina slowly, stirring all the time.
Continue stirring until the mixture thickens and boils.
It will get thicker as it cools, however if it is too runny, add some more semolina, once again stirring as you add it.
Turn off the heat and add the sweetener of your choice. You do not need a lot as the sultanas are sweet - I added about 1 teaspoon of coconut syrup.
Mix and add the sultanas.
Pour into individual serving dishes and serve, or let cool down, cover with Glad Wrap and keep in the fridge for up to 4 days.
