Brie and Bacon Slices

Brie, bacon, slice, pizza

This is essentially a cheat’s pizza, using pastry as the base instead of bread.

Preparation Time: 35 minutes
Cooking Time: 30 minutes
Serves: Makes 8 Slices

230g brie
6 rashers of bacon
200g plain flour
60g margarine
2 eggs
2 tbsp mixed hetbs

Cook the bacon in the microwave for five minutes, and then slice two into small size pieces.

Beat together the flour, margarine, eggs, and sliced bacon to form a ball of pastry.

Chill pastry in the fridge for ten minutes.
Pre-heat oven to 220 ༠C/ 200 ༠C fan/375༠F/7 Gas.
Roll out the pastry into a round base, and then bake in the oven for 15 minutes.

Chop the brie and remaining bacon, and spread evenly over the pastry base.
Scatter mixed herbs on top.
Reduce the oven temperature to 180༠C or 160 ༠ C fan/325༠F/5 gas, and bake for another ten minutes.

Slice into eight.
