There are classic flavour combinations in cooking, where a couple of ingredients work perfectly together. Brie and cranberry is one such classic combo. These simple filo parcels make a tasty appetiser or little starter, ideal for a dinner party with friends.
Preparation Time: 15 minutes
Cooking Time: 8 minutes
Serves: 6 (12 filo parcels)
Ingredients
200g filo pastry sheets
200g Brie cheese
50g (about a heaped tsp) cranberry sauce
25g melted butter
Method
Preheat oven to 190c fan.
Cut the Brie into small cubes around one centimetre square. Of course you don't need to be absolutely exact.
Add the cranberry to the Brie and mix well so the cheese is evenly coated.
Cut the filo pastry into 36 squares, 9 cm x 9 cm.
You will need three squares of filo for each parcel. Brush each square will melted butter and layer on top of each other to create a star.
Add a couple of teaspoons of the Brie cheese to the centre of the filo.
Gently pull up the sides of the filo and pinch together.
Brush the outside with melted butter.
Once all parcels are complete, pop in the oven for 8 minutes or until golden brown.
Serve immediately while the cheese is still warm and runny inside the parcel.
