Brioche is an incredibly indulgent French bread; it is made using a rich dough. It is extremely buttery, so tastes great naked. You could also smear it in lots of jam for a lovely afternoon tea. In the unlikely event that you have any left over, you can use it to make a sumptuous bread and butter pudding. Although it has French origins, brioche is also a traditional bread eaten in Greece over the Easter weekend. Based on the brands I used, each slice is about 152 calories. Makes: 15 servings
Ingredients
500g white bread flour
160g margarine
1/2 tsp salt
1 1/2 tsp fast action yeast
1 tbsp Xylitol (or caster sugar if your prefer)
4 tbsp light soya milk
4 large eggs
Method
Mix the flour, salt, yeast, and sugar together.
Beat the eggs with the milk, then beat it into the flour to form a dough.
Work in the butter to form a sticky dough and knead for ten minutes.
Prove the dough for about an hour, then transfer it into a loaf tin.
Bake in a pre-heated oven at 190 ༠C/ 170 ༠C fan/350༠F/4 Gas.
