Brûlée Brownies

Combining an indulgent cake with an indulgent dessert creates an extra indulgent treat to have with your cup of tea.

Preparation Time: 30 minutes
Cooking Time: 40 minutes
Makes: 16 servings

Ingredients
8 eggs
45g Truvia sweetener (or 100g caster sugar)
80g soft brown sugar
2 tsp vanilla extract
75g wholemeal self raising flour
75g plain wholemeal flour
70g cocoa powder
110g margarine
200g dark chocolate
250ml double cream
2 ½ tbsp cornflour

Method
  • Whisk three eggs with soft brown sugar, 10g sweetener (40g caster sugar), and one teaspoon vanilla extract.



  • Melt the chocolate over a pan of hot water, and then stir in the the margarine to form a thick ganache.
  • Pre-heat the oven to 170 & #3872 ;C/ 150 & #3872 ;C fan/350& #3872 ;F/4 Gas.
  • Stir into the egg mixture, and then fold in the cocoa powder and wholemeal flours.



  • Pour the mixture into a square baking tray and bake for 25 minutes.



  • Gently heat the cream with vanilla extract and allow to cool.
  • Separate two eggs and beat the yolks into three whole eggs, along with 30g sweetener (110g caster sugar), and the cornflour.
  • Stir the cream into the mixture, then return to the heat and keep stirring until thick.



  • Once cooled, spread the mixture over the brownies and sprinkle with the remaining sweetener/caster sugar.
  • Place under the grill for a few minutes until golden brown.



  • Slice into sixteen pieces.
