Broad Bean Bacon Salad

This is my take on Jamie Oliver's salad, as seen in his 'Jamie's Great Britain'. It's an absolute doddle to make and yummy.

Preparation Time: 2 minutes
Cooking Time: 10 minutes
Makes: 2 servings

6 unsmoked/smoked lean back bacon rashed
250g of broad beans (frozen/fresh)
Black pepper
A bunch of mint
A lemon
Olive oil
Spinach (optional)

Grill your bacon rashers until they're how you like them, near crispy is what I consider perfect

Put your broad beans in a pan of boiling water, and simmer for about 5 minutes (any longer and they'll be horribly soggy), you want al dente beans

In a bowl bash up your bunch of mint (this releases the flavours), dress in a splash of olive oil, black pepper and a squeeze of half a lemon.

Check your bacon, turn it over and pop back under the grill. If you're using a George Foreman turn it off and let it rest for a minute or two

Drain your broad beans in a colander and add to the bowl of dressed mint. Toss and add your pieces of bacon and toss again.

Finally add a garnish of ripped baby spinach leaves and another twist of cracked black pepper, the tiniest splash of olive oil, and a (gentler this time) squeeze of lemon juice.

Bacon salad

Cheffy stuff done your meal is served. This makes a lovely summer lunch, or starter if you're having a dinner party. Tuck in.
