Broccoli and Blue Cheese Soup
Soup is somehow "warming" on a cold winter night and it was on such a night that I made this one!
This soup was delightful and my friend and I ate several bowls of it, despite having cooked a main meal also.
The blue cheese, once again, just gave it that extra tang, even though I did not put a lot in.
I used [link http://recipeyum.com.au/healthy-vegetable-soup-for-stockcooking/ home made vegetable broth] which is far nicer and healthier than a packet or tin soup.
Preparation Time: 15 minutes
Cooking Time: 35 minutes plus vegetable soup base
Makes: 4 servings
Ingredients
2 tbsp butter
1 onion, chopped
1 small potato, chopped
375 g broccoli, cut into florets

75 g blue cheese, crumbled/diced
Croutons, to garnish
Method
Melt the butter in a large saucepan, and add the onion and potato. Stir well.
Cover and simmer over a low heat for 10 minutes.
Add the broccoli and cook for a further 5 minutes.
Increase the heat to medium, and pour in the vegetable stock, and bring to the boil.
Reduce heat and cook for a further 15 minutes or until all the vegetables are done.
Strain the soup into a bowl, keeping the vegetables, and let them cool slightly.
Put the vegetables in a food processor or blender with a ladle of the soup and blend until smooth.
While the motor is still on, gradually add the remaining strained stock.
Return the soup to the pan and reheat until almost boiling.
Remove from the heat and stir in the blue cheese until it is melted.
Add some salt and pepper as desired, and serve with the croutons.
For the croutons -I didn't want a lot - so I just grilled a thick slice of bread on both sides, and cut it into chunks.
Delicious, and would make a complete meal on a cold night for 2 or 3 people, especially if you add some thick slices of fresh bread.
