Broccoli and Feta Fritters

These fritters are a great vegetarian meal or a yummy snack to incorporate more veggies into your diet. I bake mine in the oven as a healthier alternative to frying. However, frying the fritters in a saucepan on a high heat is a faster way to cook them if you are in a hurry.

Preparation Time: 15-20 minutes
Cooking Time: 30 minutes
Serves: 6-10 (depending on the size of your fritters)

3 cups broccoli, riced (see method)
1 egg
½ cup crumbled feta
½ cup flour
1 clove garlic finely chopped
Pinch of salt and pepper
Pinch of mixed herbs

  • Preheat oven to 180 degrees. Line a baking tray with baking paper and set aside.

  • Prepare the broccoli. If you have a food processor cut florets of the broccoli and process them until the broccoli is finely diced. I don’t have a food processor but instead use a grater to create the broccoli rice. I find it easier to hold a whole head of broccoli when grating instead of trying to grate individual florets. Alternatively, finely chopping the broccoli with a knife is just fine.

  • Riced Broccoli

  • Place the broccoli in a microwave safe bowl and cover with cling wrap. Steam the broccoli by cooking it in the microwave for 3 minutes.

  • In a separate bowl combine the remaining ingredients then add the broccoli and stir to combine.

  • Fritter batter

  • Scoop portions of the batter onto the baking tray and using a spoon spread it out to create flat round fritters. I make mine quite big for meal sized portions however you could make them smaller for snack sized servings. Just note smaller sized fritters will take less time to cook.

  • Spread batter on tray to make fritters

  • Cook the fritters in the oven for 30 minutes or until golden brown. Serve as is or top with more crumbled feta and maybe a drizzle of balsamic. Serving with a beetroot or Tzatziki dip would also be delicious or use them as a healthy pizza base.
