Broccoli and Zucchini Soup

This broccoli and zucchini soup is the perfect thing for a cold winter night, and it will warm you right up.


Preparation Time: 10 minutes
Cooking Time: 18 minutes
Makes: 6 servings


1 Large Onion
2 Gloves garlic
3 Medium Zucchinis
1 Large Broccoli
1 Litre Vegetable Stock
1/2 Cup of Soy Cooking Cream
2 Tablespoons of Water
Pepper to taste


Prepare all veggies before beginning. Dice onion, garlic and zucchini and chop broccoli into small florrets.

Place onion and garlic in a large saucepan on a medium - high heat with two tablespoons of water cover and boil for 3-5minutes.

Boil kettle and add 1 litre of water and vegetable stock to saucepan and allow to boil stiring occasionally.

Add zucchini immediately after.

Steam broccoli separately until soft. Once soft add broccoli to the saucepan.

Cook on rolling boil for 8-10minutes until soft.

Place on low heat and mash the veggies with a potato masher, if you desire a more puree type soup you can use a food processor.

Once mashed add 1/2 cup soy cooking cream.

Cook for 1 minute and then serve.
