Broccoli and Zucchini Soup

This broccoli and zucchini soup is the perfect thing for a cold winter night, and it will warm you right up.



Preparation Time: 10 minutes
Cooking Time: 18 minutes
Makes: 6 servings

Ingredients

1 Large Onion
2 Gloves garlic
3 Medium Zucchinis
1 Large Broccoli
1 Litre Vegetable Stock
1/2 Cup of Soy Cooking Cream
2 Tablespoons of Water
Pepper to taste

Method

  • Prepare all veggies before beginning. Dice onion, garlic and zucchini and chop broccoli into small florrets.

  • Place onion and garlic in a large saucepan on a medium - high heat with two tablespoons of water cover and boil for 3-5minutes.

  • Boil kettle and add 1 litre of water and vegetable stock to saucepan and allow to boil stiring occasionally.

  • Add zucchini immediately after.

  • Steam broccoli separately until soft. Once soft add broccoli to the saucepan.

  • Cook on rolling boil for 8-10minutes until soft.

  • Place on low heat and mash the veggies with a potato masher, if you desire a more puree type soup you can use a food processor.

  • Once mashed add 1/2 cup soy cooking cream.

  • Cook for 1 minute and then serve.
