Broccoli Cashew and Cranberry Salad
This is such an easy salad, and something quite different which is sure to impress.
It can be prepared almost to the end in advance.
Preparation Time: 10 minutes
Cooking Time: 0 minutes
Serves: 3
Ingredients
Broccoli - about 1 small one
¾ cup cashews, broken, toasted (optional)
¼ to ½ cup cranberries
1 small shallot, finely chopped
¼ cup mayo
Bit of wasabi mayo (optional)
¼ cup hot water
1 boiled egg (optional)
Method
Put the broccoli, onion, and cranberries in a bowl.
I did not cook the broccoli however you COULD blanch it for a minute or two and wait for it to cool down.
Add the cashews.
You can make it up to here beforehand.
Mix the water and mayonnaise in a separate bowl.
Stir through the salad.
Serve as a side salad or as a meal for one or two people.
