Broccoli Frittata

I taste of Spain with a healthy hit of broccoli. This dish is great for breakfast, lunch OR dinner and can easily be packed for work lunches.

Served hot with olive sourdough.


Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 4-6 servings

Ingredients
1 garlic clove
2 tablespoons olive oil
1 broccoli head
1/2 teaspoon chilli flakes
Salt
Black Pepper
8 free range eggs
1/2 cup grated cheese



Method
  • Preheat the oven to 175° C.

  • In an ovenproof nonstick pan, heat oil and cook the garlic over a moderately high heat for 30 seconds.



  • Add florets of broccoli and chilli flakes and cook for 1 minute.



  • Stir in 2 tablespoons of water, season with salt and pepper and cook until broccoli is cooked but firm.

  • In a bowl, whisk the eggs with pink salt and black pepper.



  • Pour the egg mixture over the broccoli, stir and leave.

  • Cook until it sets around the edges, will take about 3 minutes.



  • Sprinkle with grated cheese and put in the oven.


  • Bake the frittata until the center is just set, should take about 12 minutes.




  • Serve warm or at room temperature.

  • Serve with toast, salad or enjoy on its own.
