Broccoli Leek Potato Yogurt Soup
Classic potato and leek soup with a green and yogurty twist.
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 6 servings
Ingredients
700 grams white potatoes
3 small leek
1 onion
2 tsp minced garlic
125 mls natural yogurt
1 head of broccoli
1.25 lt vegetable stock
1 TBSP oil
Fresh parsley and seasoning to serve.
Method
Brown the chopped onion and garlic in a large stock pot.
Add the diced potato and stir.
Add the chopped leek and broccoli and stir.
Pour in 1.25 lt of vegetable stock.
Place the lid on your pot and allow to bubble away until the potatoes are soft.
Blend your soup.
Pour in the yogurt and blend again.
Serve hot with bread, more yogurt, parsley and seasoning.
