Broccoli Leek Potato Yogurt Soup

Classic potato and leek soup with a green and yogurty twist.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 6 servings



Ingredients
700 grams white potatoes
3 small leek
1 onion
2 tsp minced garlic
125 mls natural yogurt
1 head of broccoli
1.25 lt vegetable stock
1 TBSP oil
Fresh parsley and seasoning to serve.

Method

  • Brown the chopped onion and garlic in a large stock pot.


  • Add the diced potato and stir.


  • Add the chopped leek and broccoli and stir.

  • Pour in 1.25 lt of vegetable stock.

  • Place the lid on your pot and allow to bubble away until the potatoes are soft.



  • Blend your soup.




  • Pour in the yogurt and blend again.



  • Serve hot with bread, more yogurt, parsley and seasoning.
