Broccoli mushroom chicken risotto

I'm a huge fan of risotto, especially with mushrooms. Chicken is my meat of choice. This recipe is made with a cheese sauce using corn flour. I'm also a big fan of using turmeric in most meals, here it's in the rice.


Preparation Time: 15 minutes
Cooking Time: 25 minutes
Makes: 2 servings

Ingredients
1 chicken breast
1/2 Broccoli head
3 button mushrooms
1 brown onion
1 cup Arborio rice
1/2 teaspoon turmeric
2 cups water



Cheese Sauce
1 tablespoon margarine
1/2 cup milk
1 tablespoon corn flour
1/2 cup grated cheese




Method
  • Place water, Arborio rice and turmeric in pot or rice cooker and cook for 15 minutes
  • Cut broccoli, mushrooms, onion and chicken and cook on medium heat for 20 minutes
  • Place margarine in saucepan and melt on low heat, then add corn flour, milk and cheese, stir until all melted and thick sauce consistency
  • Mix on a plate as desired and serve
