Macaroni cheese is a comfort food dish, and as with most comfort food, it usually high in fat and low in nutrition. Using low fat cheese and adding some vegetables is one good way of making it a bit healthier. I christen this dish 'broccoroni cheese'. Based on the brands I used, each portion is about 263 calories.

Makes: 4 servings
Ingredients
4 rashes of back bacon
300g macaroni
200g frozen broccoli
200g tinned sweetcorn
150g half fat soft cheese
200ml light soya milk
1 tsp parsley
1 brown onion
1 slice brown bread
20g parmesan
Method
Simmer the pasta in boiling water for thirteen minutes while steaming the broccoli over the top.
Fry the bacon for five minutes on either side, and chop into small pieces.
Chop the onion and fry for seven minutes.
Drain the pasta, then mix in the broccoli, bacon, and onion.
Mix the sweetcorn, soft cheese, and milk and cook in a saucepan until the cheese melts.
Pour the cheese mixture over the pasta.
Crumble the bread into breadcrumbs and sprinkle it over the pasta along with the parmesan and parsley.
Grill for about five minutes.
