Brown Bread Ice Cream

Although it sounds like an unusual combination, brown bread with ice cream works very well, and creates a unique savoury flavour. The origin of the ice cream derives from the original grape-nut ice cream invented in 1919 in Canada, when a chef called Hannah Young added cereal to her ice cream because she did not have any fruit. Brown bread is a variation on that recipe.

Preparation Time: 20 minutes plus freezing time
Cooking Time: 5 minutes
Makes: 5 servings

Ingredients
175g wholemeal bread
125g coconut sugar
300g creme fraiche
300g natural fat free yoghurt
2 eggs

Method



  • Blitz the bread in a food processor with the coconut sugar.



  • Toast the breadcrumbs under the grill for five minutes.



  • Beat the creme fraiche and yogurt together.



  • Separate the eggs and beat in the yolks.



  • Mix in the breadcrumbs.
  • Whisk the whites and fold into the mixture.



  • Put the mixture in a freezable sealed one litre tub and freeze overnight.



  • Take out of the freezer and allow to soften before serving.
