Brown Butter Jam Bars with Homemade Jam
I have previously published a few home-made jam/marmalade recipes, and find I have several jars left, so decided to make some slice that would use up some of these delicious jams.
In this recipe I used both marmalade and a strawberry jam.
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: About 30 - 35
Ingredients
1¼ cups rolled oats
1 cup almonds, ground fine
1 cup plain flour
½ cup brown sugar
½ tsp baking soda
½ tsp salt
Zest of 1 orange
1 cup home made jam
160 g butter
Method
Combine all the ingredients except the butter and the jam.
Cut the butter into pieces and cook over a medium heat, stirring. The milk solids will be clearly visible and will eventually go to the bottom of the boiling butter. Keep cooking until they turn a deep brown colour, but do not let them burn.

Take off the heat immediately and pour it into the dry ingredients and mix. You will then get a lovely aroma of orange!
In a 20 cm square pan, put some baking paper, and press about two thirds of the mixture into this.
Add the jam on top.
Crumble the rest of the dough over this.
Bake in a 180°/160° fan forced oven for about 30 minutes or until it is just browning.
Cool and cut into squares.
They are yummy and last for ages in the fridge.
