Brown Rice Fresh Corn and Broccoli Casserole
This is a low fat recipe, which is healthy and tasty. Not difficult to make, although it takes a while to cook, it will go with many other main dishes, and I served it the first time with my [link http://recipeyum.com.au/lasagna-cupcake-pies/ lasagna cupcakes]
Preparation Time: 10 minutes
Cooking Time: 55 minutes
Makes: 2 servings or 1 as a main meal
Ingredients
1/3 cup brown rice
250 g cream of chicken, or broccoli soup
½ cup of fresh corn
125 g broccoli flowerettes
½ cup water
1 tbsp Parmesan cheese, grated
Method
Cook the rice according to the packet directions - you could use a quick cooking one, but I used a low GI brown rice.
Cook the sweetcorn, allow to cool and cut off the cob. You could use frozen or tinned however fresh is far nicer.
Preheat the oven to 175°/155° fan forced.
Place the soup, corn, broccoli, water and salt and pepper into a bowl.
Stir to combine.
Mix in the cooked brown rice.
Pour this mixture into a small casserole dish.
Sprinkle with Parmesan cheese and bake for about 20 minutes.
Served with salad and lasagna cupcakes
