This was a recipe I have not had before and it turned out very good. The potatoes get browned on very high heat before adding the chicken pieces and it is a one pot only dish!
Preparation Time: 15 minutes
Cooking Time: 60 minutes
Serves: 3
Ingredients
500 g chicken breasts, cut into 1¼ cm pieces
4 - 5 medium potatoes, cut into 1¼ cm pieces - I left the skin on
2½ tbsp olive oil
½ tsp paprika
1 tsp garlic powder
2 - 3 tbsp hot sauce, or to taste
For the topping
1 cup cheese, grated
½ cup cooked, bacon, crumbled
½ cup spring onions, sliced
Method
Preheat the oven to 240°/220° if fan forced.
In a large bowl, mix the olive oil, hot sauce, some salt and pepper, garlic powder and paprika.
Add the cut potatoes and stir to coat.
Grease a baking dish and add the potatoes leaving behind any liquid.
Add the diced chicken to this liquid and stir to coat. Leave this while the potatoes cook.
Cook the potatoes for about 50 minutes stirring every 20 minutes or so, and until they are nice and crisp and brown.
Once they are fully cooked, take them out of the oven and lower the oven temperature to 200°/180° if fan forced.
Add the marinated chicken on top of the potatoes.
For the topping
Mix all the topping ingredients together.
Put this on top of the chicken.
Bake for up to 15 minutes or until the topping is melted and bubbly.
Serve - good to heat up in the oven for the next few days.
