Brunch 26 Open Sandwich with Mushrooms Tomato and Egg

This was an easy brunch and is No 26 in the series of brunch recipes that I have written.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 1

Ingredients
½ shallot, chopped
About 5 mushrooms
½ large tomato, chopped
¼ tsp thyme
1 large egg
1 slice wholemeal bread
2 tbsp Parmesan, grated
1 tbsp chives, chopped

Method
  • Heat a bit of oil in a pan and add the shallot. Cook till it is just starting to get soft - about 2 minutes, and add a bit of salt and pepper.

  • Add the tomato and cook for another few minutes.

  • Add a bit more oil if needed, and add the chopped mushrooms, thyme, bit of salt and pepper, and cook, turning occasionally until the mushrooms are tender - about 6 minutes.


  • Cook the egg, and toast the bread, and butter it (optional).

  • Assemble by putting the mushrooms and tomato mixture on the toast, and sprinkle the grated cheese on this.


  • Top with the fried egg.

  • A great and healthy brunch or breakfast, or a casual Sunday night meal if you don't feel like cooking!
