Brunch 26 Open Sandwich with Mushrooms Tomato and Egg
This was an easy brunch and is No 26 in the series of brunch recipes that I have written.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 1
Ingredients
½ shallot, chopped
About 5 mushrooms
½ large tomato, chopped
¼ tsp thyme
1 large egg
1 slice wholemeal bread
2 tbsp Parmesan, grated
1 tbsp chives, chopped
Method
Heat a bit of oil in a pan and add the shallot. Cook till it is just starting to get soft - about 2 minutes, and add a bit of salt and pepper.
Add the tomato and cook for another few minutes.
Add a bit more oil if needed, and add the chopped mushrooms, thyme, bit of salt and pepper, and cook, turning occasionally until the mushrooms are tender - about 6 minutes.
Cook the egg, and toast the bread, and butter it (optional).
Assemble by putting the mushrooms and tomato mixture on the toast, and sprinkle the grated cheese on this.
Top with the fried egg.
A great and healthy brunch or breakfast, or a casual Sunday night meal if you don't feel like cooking!
