Brunch 27 Rhubarb Strawberry Chia Pudding

I normally make a brunch/breakfast using eggs however this time decided to do something different, and probably more healthy.

It was a pleasant surprise, easy to make and delicious. It could also be served as a dessert.

Preparation Time: 10 minutes plus overnight in fridge
Cooking Time: 20 minutes
Serves: 2

Ingredients
250 g rhubarb, peeled and cut into small pieces
2 tbsp honey
Juice of ¼ lemon
Dash of vanilla
125 g strawberries, cut into quarters
1½ tbsp chia seeds
½ cup Greek yogurt

Method
  • Combine the rhubarb, lemon juice and honey.

  • Stir and cook on a medium heat for about 6 minutes.

  • Add the cut strawberries, and cook for another 10 minutes or until the rhubarb is tender. There will be a lot of water released, and this is fine as the chia will absorb this.

  • Remove from the heat, and add the chia seeds, and mix well.

  • Put it into a container with a lid, or plastic wrap, and put in the fridge overnight.

  • To assemble - layer in a jar or dish starting with the rhubarb and strawberry mix.

  • If you are not going to eat it all in one hit, do not assemble till you are ready to eat it all.
