Brunch 27 Rhubarb Strawberry Chia Pudding
I normally make a brunch/breakfast using eggs however this time decided to do something different, and probably more healthy.
It was a pleasant surprise, easy to make and delicious. It could also be served as a dessert.
Preparation Time: 10 minutes plus overnight in fridge
Cooking Time: 20 minutes
Serves: 2
Ingredients
250 g rhubarb, peeled and cut into small pieces
2 tbsp honey
Juice of ¼ lemon
Dash of vanilla
125 g strawberries, cut into quarters
1½ tbsp chia seeds
½ cup Greek yogurt
Method
Combine the rhubarb, lemon juice and honey.
Stir and cook on a medium heat for about 6 minutes.
Add the cut strawberries, and cook for another 10 minutes or until the rhubarb is tender. There will be a lot of water released, and this is fine as the chia will absorb this.
Remove from the heat, and add the chia seeds, and mix well.
Put it into a container with a lid, or plastic wrap, and put in the fridge overnight.
To assemble - layer in a jar or dish starting with the rhubarb and strawberry mix.
If you are not going to eat it all in one hit, do not assemble till you are ready to eat it all.
