Brunch Apple Stuffed French Toast

This is another brunch recipe that I tried this week. Each week I try a different one instead of having the same cooked breakfast!

This one is easy and does not take a long time to prepare. As with all my recipes, you can substitute ordinary sugar for the less refined coconut sugar that I mostly use.

Preparation Time: 5 minutes plus 15 minutes standing
Cooking Time: 15 minutes
Makes: 2 servings

Ingredients
1 large apple - I used a Granny Smith
1 tsp butter, melted
½ tsp coconut sugar
Bit of cinnamon
½ cup milk
1 large egg
1 tsp vanilla
½ tsp extra coconut sugar
¼ tsp cinnamon
¼ tsp nutmeg
2 very thick slices of old bread - I used a brioche roll
1 tbsp butter
Icing sugar (optional)

Method
  • Peel, core, and slice the apple - I always use this handy corer for apples!


  • Cook the apple slices in 1 tsp of the melted butter over a medium heat. Cook till they are soft, adding a bit of water if needed.

  • Drain the apples and add ½ tsp coconut sugar and a bit of cinnamon.

  • Mix the milk, egg, vanilla, coconut sugar, cinnamon and nutmeg.

  • Cut a pocket into the thick bread slices, taking care not to cut all the way through, but cutting fairly close to the edges.

  • Put the cooked apple mixture into the middle of the cut bread slices.


  • Put this into a bowl and pour the liquid mixture over it. Let it stand for about 15 minutes.

  • Heat a large frypan on a low heat and melt the butter.

  • Add the stuffed bread and cook for about 7 minutes on each side, taking care when turning over.


  • Dust with icing sugar (optional).
