This is the sixth brunch recipe that I have made on a Sunday morning, and I made it in a wholemeal roll as I did not have thick toast. It would be nice in thick crusty bread!
It was really enough for two people and I did not want to eat two eggs, so I simply cut one in half when it was cooked!
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 1 - 2 servings
Ingredients
1 roll or 2 slices thick crusty bread
1 avocado
Juice of ΒΌ lemon
4 slices shortcut bacon
2 tbsp maple syrup
1 - 2 eggs
Method
Cut the roll in half ready to toast.
Cook the bacon till it is almost browned, or to your liking.
When it is almost done, add the eggs to the pan.
Mash the avocado flesh and add the lemon juice. Add salt and pepper to taste.
Toast the roll and spread the avocado mixture on each one.
Add the bacon slices and the maple syrup.
Top with the egg, and serve.
Quick, easy and delicious.
