Brunch Breakfast Burger With Avocado Roll

This is a great idea and replaces bread, however you MUST use a large avocado, and I only had small ones!

The end result is delicious anyway and great for a Sunday morning, and this is number 17 in my series of cooked brunches/breakfasts.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 1

Ingredients
1 large avocado
1 egg
2 pieces short cut bacon
Slice of tomato
White onion slice
Lettuce leaf
1 tbsp mayonnaise

Method
  • Put the bacon in a frypan and cook till it is starting to brown/crispy, to your liking - I always use short cut as there is little fat on this.
  • Use the bit of bacon fat instead of oil, and then discard these small fat pieces


  • Put the egg into the pan just before the bacon is done, or remove the bacon, and put in the egg. Cook until the egg is just done and yolk still runny.

  • Cut the avocado in half width-wise.


  • Remove the pip carefully.

  • Put the mayonnaise in where the pip was in the avocado.


  • Take off the avocado skin.

  • Add the lettuce, onion, and tomato.

  • Then add the bacon and the egg.
  • You need a large avocado to make this look more like a burger


  • Put the top of the avocado on, and serve.
