Brunch Corn Flakes French Toast Slices

This is #15 in my series of great brunches and these Corn Flake French toasts were crisp and delicious.

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Serves: 2

Ingredients
1 tbsp unsalted butter
1 large egg
Dash of cinnamon
¼ tsp vanilla extract
Pinch of nutmeg
2 slices of bread
1 cup Corn Flakes
Maple syrup, for serving

Method
  • Melt the butter in a large frypan over a medium heat.

  • Cut the bread into 2 - 2½ cm strips.
  • They need not be even slices but next time I would cut off crusts as Corn Flakes did not stick to them


  • Mix the eggs, milk, cinnamon, vanilla and nutmeg in a bowl.

  • Crush the Corn Flakes.
  • My crushed Corn Flakes were rather large


  • Dip each bread strip into the egg mixture, and let the egg drip off.

  • Dip them into the crushed Corn Flakes, pressing them down so they are nicely coated.


  • Add the bread strips to the frypan and cook until they are evenly golden and crispy - this takes about 3 minutes each side.

  • Serve, smothered with maple syrup!
