Brunch Crepes with Blueberries and Bananas

#16 in my series of brunches, and this one, although sweet if you add maple syrup, is healthy as it has bananas and blueberries in it!
I have put blueberries in the batter as well and if I was not worried about sugar, I would have also added chocolate chips to it!
I did not actually measure the ingredients for this one but made it into a thin batter so quantities are a rough guide only - you cannot go wrong however.

Ingredients
¼ cup plain flour
¾ tsp baking powder
1 small egg
¼ cup milk
2 tsp coconut sugar
Vanilla (optional)
Blueberries
1 banana
Grated coconut (optional) for garnish
Method
To make the batter, mix first the flour and the baking powder, and then add the egg, sugar and vanilla. The mixture will be very firm like dough, with no lumps.
Add the milk a bit at a time till it reaches a thin consistency - you may need to use more than I have stated.
Add some of the blueberries if you are using them in the batter.
Mix until it is smooth and then heat some butter in a pan.
Pour some batter into the hot butter and if you have a spreader, make them as thin as possible - if you dont have one of these, just lift the frypan to make the batter run - do not worry if they are not even!
Cook for a few minutes till they start to get bubbles on the top and then turn over. The second side will only need about a minute to be brown.
Keep doing this and lay each one on top of each other - I put some banana and blueberries and a tiny bit of maple syrup in between each layer.
Scatter the coconut on top, and add the rest of the banana and as many blueberries as you wish.
Sprinkle with maple syrup and decorate with a strawberry.
