Brunch Mascarpone Scrambled Eggs with Garlic Toast
Mascarpone is a very thick Italian cream cheese, and I had made
THIS RECIPE using this cheese. I had half a packet of this expensive, delicious cheese left over, so I wanted to find a way to use some of it up.
This breakfast or brunch turned out very nice and was a bit different to my normal breakfasts!
Preparation Time: 5 minutes
Cooking Time: 12 minutes
Makes: 1 serving
Ingredients
1 or 2 slices thick bread
½ garlic clove, peeled and cut
2 large eggs
Garlic chives (I have these growing, but ordinary chives would work)
Bit of unsalted butter
Up to ¼ cup Mascarpone
Method
Preheat the oven to 210°/190° fan forced.
Put the bread on baking paper on a tray, and brush with a bit of olive oil.
Bake until just starting to brown - about 5 - 6 minutes - do not over-bake or it will become too hard.
While the toast is still warm, rub each slice lightly with the cut garlic.
Whisk the eggs, chives, a bit of salt and pepper.
Melt some butter in a fry pan and pour in the egg mixture. Cook till the bottom sets which is not long, and then keep pushing the cooked portion of the egg into the centre.
Cook about a minute - I turned round and it was too well done - scrambled eggs should be just a tad runny before turning off the heat.
Scrambled eggs should be not be as well cooked as mine are here
Add the Mascarpone and cook, stirring lightly to mix it until the eggs are almost done.
Remove from the heat and serve on top of, or next to the garlic toast.
