Bubble and Squeak
It might not look very exciting (ok, I admit it doesn't look appealing at all) but I love some bubble and squeak the day after a roast lunch and it tastes great. I often do extra portions at Sunday lunch to guarantee there's enough for an easy bubble and squeak the next day. It's also become a Boxing Day tradition in my family.
Part of the beauty of this dish is that you don't need exact measures, just use what you have. The leftover veg you have is pretty interchangeable with only the potatoes being vital to hold everything together.
Preparation Time: 5 minutes
Cooking Time: 15-20 minutes
Serves: 2-4
Ingredients
Butter or oil for frying
1 onion
Carrots
Cabbage
Brussels sprouts
Roast or mashed potatoes
1 egg
Salt and pepper
Method
Heat a little oil or butter in a frying pan.
Dice and fry the onion until beginning to soften.
Next add in any leftover vegetables you are using. If the pieces are large, you may need to chop them up a little first.
Add the mashed potato, or if you're using leftover roast potatoes then give them a mash first.
Mix everything together in the hot pan including an egg to help hold it together and then push it down so the mixture is flat and fills the pan.
Don't be afraid to let the potato brown and crisp deeply.
Flip over and repeat on the other side.
Bubble and squeak is great served with any leftover gravy and if you're a Yorkshire pudding lover like me, you might want to include one of these too.
