Bubble Tea

Bubble Tea or Pearl Milk Tea (PMT) was invented in Taiwan in the 1980s and can now be found in most major cities across the world, particularly in South East Asia. I guess people just love the novelty of sipping cold tea and chewing little "pearls" as they go, so we decided to try making it at home.

This is surprisingly easy to make and lots of fun too. I found a prized packet of the Tapioca Pearls in our local Asian Grocer, so you might have to hunt around to find something similar. If you want to add a fruit flavor like they do in the traditional Bubble Tea shops, then maybe try strawberry or you could use green tea instead of black tea.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 2 large servings

1 cup tapioca pearls
10 cups filtered water
2 black tea bags
1 cup milk
2 tablespoons caster sugar
1 teaspoon flavoring (optional)

Boil ten cups of filtered water in a saucepan.

Add one cup of tapioca pearls and simmer for ten minutes.

The tapioca pearls will turn shiny or a bit translucent, then turn off the heat and let them sit on stove for five minutes to "fatten up".

Drain the excess water off and add the caster sugar. Stir it in. Once the water is drained the pearls begin to dry out, so it is best to use them up straight away (rather than store them for later).

When the pearls are cooled, place them in the base of a see through glass.

Make a "normal" cup of tea with milk. Allow this to cool and tip it on top of the pearls in the glass. Add fruity flavoring at this point, if you wish.

Enjoy your very own home made Bubble Tea. I reckon this would be fun to serve with fruit juice at an older child's birthday party too.
