Buddha Bowl with Sauerkraut and Homemade Hummus

Buddha bowls are such a great lunch or dinner option. They are filling, nutritious and can be made with so many different ingredients. I have opted for fresh raw ingredients as well as nutty homemade hummus and sauerkraut for an extra boost of probiotics, but cooked vegetables, tofu and legumes work just as well.



Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 1

Ingredients
1/2 cup of dry rice
1/2 capsicum
1/2 cucumber
1 tomato
1 tbsp [linkhttp://recipeyum.com.au/4-ingredient-hummus/ hummus]
1 tbsp sauerkraut
Handful of leaves
Salt, pepper and lemon to taste

Method
  • Cook the rice and set aside to cool. I used white rice but black, brown and red all work well too.
  • Make your [linkhttp://recipeyum.com.au/4-ingredient-hummus/ hummus] or buy some with a low oil content from the store.

  • Wash and chop your vegetables so they are all roughly the same size and small enough to eat without needing a knife.

  • Once the rice is cool start to create your bowl. I like to have a bed of leaves, top with the cooled rice, than arrange the vegetables and sides on top in as aesthetic manner.
