I love veggie patties. I love them in burgers, I love them in wraps, I love them on their own just with salad. I could eat them everyday, luckily they are easy to make, fresh and healthy.

Simple Wrap
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 4 patties

Ingredients
Ingredients
1 can of butter beans - drained
1 brown onion - diced
1 tsp of minced garlic
1 tsp cumin powder
1 field mushroom
1 egg
1 tbs flour
1 handful of fresh basil
10 mint leaves
Salt and Pepper
Oil for cooking
Method
Cook the onions in a drop of oil until they start to soften.

Cook Until Soft
Add the garlic, cumin and sliced mushroom, stir every minute or so until the mushrooms are cooked.

Whilst the onions are cooking drain and mash the beans.

Quick Mash
Don't blend them, you want some rustic chunks in the patty.
Add the roughly ripped fresh herbs and egg.

Mix Everything together
When the mushrooms and onions are cooked add them to the wet mixture and stir through.
Add 1 tablespoon of flour then shape into four equal balls.

Cook until brown on each side
Heat 1 tablespoon of oil then carefully drop in the patties.
Cook for a few minutes each side and they are ready to eat.

Serve with whatever you like
Tonight I enjoyed my patties in a wrap. I added spinach, tomato, cucumber and home made beetroot dip to a wholemeal wrap. Delicious.
