Butter Chicken

Butter Chicken is one of the most delicious dishes that hails from the Indian culture. It's creamy, the chicken is tender, and all the ingredients mix perfectly to produce a hearty dish!

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 2 servings

600g chicken breast
MasterFoods Butter Chicken marinade
1/2 cup thickened cream
125g baby spinach leaves (chopped finely)
1 large capsicum (finely cut)
2-3 mushrooms (sliced)
375 ml water
Steamed rice
Pita bread pieces
Coriander leaves
Salt and pepper (to taste)

Spray some cooking oil onto a saucepan and place on medium heat.

Start off by cooking the chicken (which is cut into fairly large chunks) in the saucepan, till it turns golden brown. Add coriander leaves and mix well with the chicken pieces.

Once the chicken is well-cooked, add the Masterfoods butter chicken marinade into the saucepan. Mix the chicken well enough to be covered in the marinade.

Add the capsicum, baby spinach and mushrooms into the saucepan. Stir well in the butter chicken marinade and water.

Leave the butter chicken to simmer on low heat for about 20-30 minutes, stirring occasionally every 5-10 minutes.

In the last 10 minutes, add thickened cream and stir well into the butter chicken marinade.

Turn off the heat, letting the butter chicken cook for a further 5 minutes.

Serve on a bed of rice with a side of pita bread pieces.
