Butternut Squash Salad
A recipe that will make you excited by the mention of the word 'salad'.
Preparation Time: 25 minutes
Cooking Time: 40 minutes
Makes: 3 servings
Ingredients
100g mixed leaf salad
100g goat cheese
200g beetroot
40g pine nuts
30g celery
1 small butternut squash
6 tbsp avocado oil
2 tbsp malt vinegar
2 tbsp apple cider vinegar
2 tbsp white wine vinegar
1 tbsp honey
1/2 tbsp mustard powder
1/2 tbsp dried dill
2 tsp lemon juice
1 tbsp coconut oil
Method
Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/350 & #3872 ;F/4 Gas.
Toast the pine nuts under the grill for a few minutes until golden brown.
Peel, chop and remove seeds of butternut squash, and then roast in coconut oil for half an hour in the oven.
Divide mixed leaf salad between three bowls.
Chop celery and add to bowls with pine nuts.
Peel and steam the beetroot, then divide equally between the salad bowls along with the butternut squash.
Chop goat cheese and heat under the grill for a few minutes until it starts to colour, but not melt. Divide between the three bowls.
Using a sealable jar, pour in the avocado oil, vinegars, lemon juice, mustard powder, honey and drill. Give it a good shake, and then drizzle the vinaigrette over the the salads.
