Butternut Squash Salad

A recipe that will make you excited by the mention of the word 'salad'.

Preparation Time: 25 minutes
Cooking Time: 40 minutes
Makes: 3 servings

Ingredients
100g mixed leaf salad
100g goat cheese
200g beetroot
40g pine nuts
30g celery
1 small butternut squash
6 tbsp avocado oil
2 tbsp malt vinegar
2 tbsp apple cider vinegar
2 tbsp white wine vinegar
1 tbsp honey
1/2 tbsp mustard powder
1/2 tbsp dried dill
2 tsp lemon juice
1 tbsp coconut oil

Method
  • Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/350 & #3872 ;F/4 Gas.



  • Toast the pine nuts under the grill for a few minutes until golden brown.




  • Peel, chop and remove seeds of butternut squash, and then roast in coconut oil for half an hour in the oven.



  • Divide mixed leaf salad between three bowls.



  • Chop celery and add to bowls with pine nuts.



  • Peel and steam the beetroot, then divide equally between the salad bowls along with the butternut squash.



  • Chop goat cheese and heat under the grill for a few minutes until it starts to colour, but not melt. Divide between the three bowls.



  • Using a sealable jar, pour in the avocado oil, vinegars, lemon juice, mustard powder, honey and drill. Give it a good shake, and then drizzle the vinaigrette over the the salads.
