Butternut Squash Shavings

The butternut squash shavings can be had as a sweet and healthy snack for munching or served as a side dish to part of a main meal.

Preparation Time: 15 minutes
Cooking Time: 1 hour
Makes: 2 servings

Ingredients
1 small butternut squash
2 tbsp coconut oil

Method
  • Peel and discard the peel of the butternut squash.



  • Peel as much of the squash as you can to create strips (it will eventually become too small to peel properly, so you can use the rest to make a butternut squash and sweet potato crumble ).
  • Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/375& #3872 ;F/5 Gas.



  • Melt the coconut oil and coat the squash all over.



  • Bake in the oven for an hour.



  • Pat the shavings using paper towels to remove excess oil.
