Butternut Squash Sweet Potato Crumble

We usually consider crumble a fruit-based pudding, but here is one you can have for dinner. It still has a lovely sweet taste about it, and is very moreish.

Preparation Time: 35 minutes
Cooking Time: 30 minutes
Makes: 3 servings

Ingredients
1 egg
4 tbsp coconut oil
500g butternut squash
200g sweet potato
5 - 10 slices wholemeal bread (depending on thickness)

Method
  • Melt the coconut oil and brush half of it over the base of a baking tray.



  • Blitz the bread in a food processor to turn it into crumbs.
  • Line half the bread in the baking tray.
  • Lightly beat an egg with a fork.
  • Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/375& #3872 ;F/5 Gas.
  • Peel the butternut squash and then chop along with the sweet potato.
  • Dip the squash and sweet potato into the egg.



  • Coat the squash and sweet potato in the breadcrumbs in the baking tray.
  • Pour over the remaining breadcrumbs.



  • Drizzle over the remaining coconut oil and then mix everything together over the sweet potato and squash as much as possible.



  • Bake in the oven for half an hour.
