Butternut Squash Sweet Potato Soup
Butternut squash and sweet potato are my two favourite vegetable (although technically a squash is a fruit), and they compliment each other beautifully. As a soup, they are incredibly comforting and warming.

Cooking Time: 27 minutes
Makes: 8 servings
Ingredients
1 butternut squash (approximately 1.6 kg)
500g sweet potatoes
1.5 L hot vegetable stock
4 tbsp nori flakes
Method
Peel, de-seed, and chop the butternut squash.
Chop the sweet potatoes and bake along with the
butternut squash for 25 minutes.
Toast the butternut squash seeds for two minutes.
In batches, puree the sweet potatoes and butternut squash in a blender with one litre of vegetable stock.
In a big bowl, stir in the remaining stock until fully combined.
If serving immediately, pour into eight soup bowls and sprinkle over a handful of toasted seeds and ½ tablespoon nori flakes.
If saving for later, stir in all the nori flakes to the whole bowl, pour into containers, and leave the seeds to the side until ready.
