Butterscotch Self Saucing Pudding

A butterscotch self saucing pudding is quick to prepare and the results are outstanding. A mouth watering combination of cake and sauce that is sure to warm you up as the nights get colder.


Preparation Time: 15 minutes
Cooking Time: 45 minutes
Serves: 4-6

Ingredients
3/4 cup brown sugar
1 1/4 cups SR flour
100 g butter, melted
1 egg, whisked
1/2 cup milk
4 tbs golden syrup
1 tbs corn flour
1 1/2 cups boiling water

Method
  • Preheat oven to 180C and grease a 6 cup capacity baking dish.
  • Add 1/4 cup brown sugar and all of the flour to a bowl and stir to combine.
  • Add the butter, egg, milk and 2 tbs golden syrup and mix till combined.

  • Pour the mixture into your baking dish.
  • In a small bowl, combine the remaining brown sugar and cornflour. sprinkle the mixture over the top of the pudding mixture.

  • In a jug, combine the boiling water and remaining golden syrup and mix well. Carefully pour it over the top of the pudding mixture.

  • Bake for 40-45 minutes. Let rest for 5 minutes before serving with ice cream or cream.
