Buttery Onion Sauce
I love this sauce, it's smooth, delicate, and delicious. They key is to sweat the onions very gently in real butter. You could also make it with 2 leeks instead of 1 onion, and serve with roast gammon.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 4-6 servings
Ingredients
50g butter
1 onion (large)
20g plain flour
275ml milk
150ml vegetable stock
1 pinch salt and pepper
Method
Melt 40g of the butter in a saucepan over a low heat (keep 10g for later in the recipe).
Finely chop the onions and then sweat them very gently in the hot butter for about 10 minutes.
Stir them every now and again. The heat should be low enough so they don't colour.
Sift the flour into the pan and stir until the butter, onion, and flour becomes a smooth paste.
Gradually incorporate the stock and milk, just a little at a time, whisking after each addition to combine the liquid into a smooth sauce.
After it's all combined make sure the heat is at its lowest setting and cook for about 6 minutes.
Season with the salt and pepper. You could also add a little nutmeg.
Stir in the remaining 10g of butter as you take it off the heat.
