Buttery Onion Sauce

I love this sauce, it's smooth, delicate, and delicious. They key is to sweat the onions very gently in real butter. You could also make it with 2 leeks instead of 1 onion, and serve with roast gammon.



Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 4-6 servings

Ingredients
50g butter
1 onion (large)
20g plain flour
275ml milk
150ml vegetable stock
1 pinch salt and pepper



Method
  • Melt 40g of the butter in a saucepan over a low heat (keep 10g for later in the recipe).
  • Finely chop the onions and then sweat them very gently in the hot butter for about 10 minutes.
  • Stir them every now and again. The heat should be low enough so they don't colour.
  • Sift the flour into the pan and stir until the butter, onion, and flour becomes a smooth paste.



  • Gradually incorporate the stock and milk, just a little at a time, whisking after each addition to combine the liquid into a smooth sauce.
  • After it's all combined make sure the heat is at its lowest setting and cook for about 6 minutes.
  • Season with the salt and pepper. You could also add a little nutmeg.
  • Stir in the remaining 10g of butter as you take it off the heat.
