Cabbage Kofta
is a very popular dish of North India. Koftas are fried dumplings either soaked in gravy and relished as a main course dish or served alone as a starter. They are a perfect combination with rice and rotis.

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 6-7 servings
Ingredients for cabbage dumplings
1 cup shredded cabbage
1 cup gram flour

1 tsp finely chopped coriander
1/4 tsp red chilli powder
1/2 tsp jeera powder
Oil to deep fry
Salt to taste
Ingredients for gravy
1 finely chopped onion
1 finely chopped tomato
2 green chillies finely chopped
1 tsp finely chopped garlic
1 tsp grated ginger
1 tsp coriander powder
1/4 tsp turmeric powder
1 tsp cumin seeds
1 tsp garam masala
1 tsp oil
Salt to taste
Preparation of cabbage Kofta (dumplings)
In a bowl add shredded cabbage, gram flour, coriander, red chilli powder, jeera powder and salt.

Mix the contents properly. Do not add any water, as cabbage is known to ooze out water on its own.
Roll them into small dumplings, called the Kofta.

Heat the oil in a frying pan and fry the Kofta (dumplings) on a medium flame till they turn golden brown in color.

Preparation of Gravy
Heat 1 tsp of oil in a pan and add cumin seed and heat it till it cracks.
Add chopped onions and stir it till it turns golden brown in colour.

Now add chopped tomatoes, ginger, garlic, green chillies, coriander powder, turmeric powder and garam masala and mix it properly and let it cook for 5-7 min.

Add 1 glass of water and stir it, so as to make the gravy thick. Allow it to cook for 5 min.

Once the gravy is ready, add the koftas (dumplings) one by one and mix it slowly with the gravy. Take due care to ensure that they do not break.

Cabbage koftas are now ready to be served hot with chapattis, puris or rice.
