Cabbage Rice Casserole

This is a tasty side that is healthy and easy to prepare. Try using different kinds of grated vegetables or add some ground beef or bacon.

Preparation Time: 30 minutes
Cooking Time: 60 minutes
Serves: 4 - 6

Ingredients
1/4 green cabbage shredded
1 carrot grated
1 small zucchini grated
1 cup cooked rice
1/2 small brown onion finely diced
2 tablespoons golden syrup
1 egg
3/4 cup milk
1/2 cup cheddar cheese
Pinch nutmeg
20 g butter
White pepper and salt to taste

Method
  • Grease a 25 cm round baking dish and preheat the oven to 170 degrees.
  • In a large pan, heat the butter to a medium - high heat. Put in the onion and cabbage and cook until softened, around 5 minutes. Remove from the heat to cool slightly.



  • In a separate bowl or jug, combine the egg, milk, nutmeg and seasoning, whisk well.
  • Combine the remaining ingredients with the cabbage mixture in the baking dish.



  • Pour in the egg mixture and stir to incorporate.
  • Bake for 50 - 60 minutes, until golden and set.
