Cacao Moulten Lava Cake Gluten Free

This cake is a perfect moorish, gluten free dessert when you are craving chocolate. It has a hot oozing chocolate centre that goes well with fresh berries and ice cream.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Serves: 2

Ingredients
1/3 cup cacao (or substitute with cocoa)
2 tbsp coconut oil
1 tbsp maple syrup
1 egg
1 egg yolk
1/3 cup caster sugar
1 pinch of salt
3 tbsp cornflour
Butter and sugar (to coat ramekins)

Method
  • Preheat the oven to 200 degrees. Coat the ramekins with butter and dust with sugar.
  • Add the cacao, coconut oil and maple syrup into a saucepan on a medium heat, stirring until combined.

  • Whisk the eggs, sugar and salt unit combined and the mixture has doubled in size.
  • Sift the cornflour into the egg mixture and gently combine.
  • Add the melted cacao mixture and gently combine.

  • Spoon into the ramekins and bake for 10 - 12 minutes, until a skewer comes out clean from 1cm from the edge of the ramekin.
  • Take the cakes out of oven and cool for 5 - 10 minutes. Gently turn the cakes out, place on serving plates and dust with icing sugar.
  • Serve with fresh berries and ice cream or cream. Enjoy.
