I tried gluten free brownies in my favourite cafe recently, and I'm a convert--gluten free chocolate bars are delicious. Here's my take on their recipe, it's pretty damn close to perfect. These use spelt flour, so their not entirely gluten free, but spelt flour is a good substitute for people with only very mild gluten sensitivity.
Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 10 servings
Ingredients
50g Spelt flour
100g Butter
100g 70% or higher Dark chocolate
10g Cacao nibs
100g Cocoa powder
100g Caster sugar
3 eggs

Method
Pour the cacao nibs into a food processor.
Place the butter, chocolate and cacao nibs in a bowl over a saucepan of simmering water.
Stir every 2 minutes until smooth (about 15 minutes).
Sift the flour and sugar together in a large mixing bowl.
Crack in the eggs and combine.
Pour chocolate mixture into the flour and egg mix, stir until fully combined.
Pour the mixture into a deep, but not necessarily wide tray tin, lined with greaseproof paper.
Place in the oven at 180 degrees for 40 minutes.
Remove from the oven and allow to cool for 30 minutes.
Enjoy either with cream, or custard, or alone with a hot cuppa.
