Caldo Verde

is a rustic Portuguese green broth soup which is traditionally prepared with cabbage.



Preparation Time: 10 minutes
Cooking Time: 35 minutes
Makes: 4 servings

Ingredients
400g potatoes
80g chorizo sausage
2 cloves of garlic
180g green cabbage
salt

Method
  • Peel and cube the potatoes. Cut the chorizo sausage into small pieces. Peel and de-germ the garlic cloves. Wash the cabbage and remove the large ribs from the leaves. Cut the leaves into strips.

  • Place the potatoes, cabbage, chorizo sausage, garlic and 800ml water into a stockpot. Add a little salt.

  • Bring to the boil, turn the heat down and cook for 35 minutes.

  • Use a stick blender or pour into a blender and blend until desired texture. Serve warm with crusty bread.
