Bursting with flavors, are easy to make, easy to pack, easy to eat, and hence, are great for your lunchbox. Basically, it is my favorite way of using up my leftovers.

Preparation Time: 30 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
300 g pizza dough. See recipe here.
Tomato Ketchup
Leftover chicken or chicken breasts cut into cubes and cooked
Mixed diced veggies (carrots, mushroom, capsicum)
100 g grated mozzarella
oregano
1 egg

Method
  • Preheat oven at 180c and grease your baking tray.
  • Roll out pizza dough to about 5 mm thick and cut out circles with about 10 cm of diameter.

  • Spread the ketchup over half of the base....

    and sprinkle over the veggies, chicken and cheese.

  • Dab a few drops of water around the dough, fold over and seal tightly.

  • Fold over into a crescent shape


  • Glaze with egg and sprinkle with oregano.

  • Bake in hot oven for 20 minutes or until golden brown.

  • Serve warm or they can also be wrapped and frozen for later use.
