Camembert Apple And Potato Terrine
This unusual recipe mixes cheese, potato and apple -a great combination!
It is quite rich due to the camembert, but is something a bit different for lunch or dinner and can be served with a salad.
Preparation Time: 50 minutes plus overnight in fridge
Cooking Time: 40 minutes
Makes: 3 - 4 servings
Ingredients
3 potatoes, unpeeled
1 Large Granny Smith apple
60 g butter
100 g [link http://reviewclue.com.au/unicorn-camembert-cheese/ Camembert] cheese, very thinly sliced
1 tblsp chopped parsley
Method
Parboil the potatoes in salted water for about 15 minutes. Drain and cool, then peel and cut into 1 cm thick slices.
Heat half the butter and a bit of olive oil in a frypan and cook the potato until just golden.
Drain on paper towels.
Core and slice the apple into about ½ cm thick rings.
Heat the remaining butter and a bit of oil, and lightly saute the apple rings until golden, and drain on paper towels.
Line a 3 cup terrine or loaf tin with baking paper and preheat the oven to moderate -around 170° - 180°.
Arrange a layer of potato in the base, add a layer of apple and then Camembert slices.
Sprinkle with parsley and season with salt and pepper to taste. Build up the layers, finishing with potato.
Spray a piece of foil and cover the terrine, sealing well. Place the terrine in a baking dish and half fill the dish with water.
Bake for 20 minutes and remove from the oven. Place a weight -I used a can of tin food -on top of the terrine, and chill overnight.
Turn out carefully, slice and serve.
