CantoneseStyle Steamed Abalone
One of the best way to enjoy live abalone is to cook it the cantonese-style. It is steamed with garlic and ginger, then served with a splash of soy sauce mixed with hot oil.

Cooking Time: 5 minutes
Makes: 6 servings
Ingredients
6 live abalone, shucked, cleaned
1 thumb-size piece ginger, cut into thin matchsticks
2 cloves garlic, minced
1 stalk scallion, julienned
1 red chilli, thinly sliced
1 tablespoons vegetable oil
1 tablespoon soy sauce
1 teaspoon sesame oil
coriander leaves, for garnish
Method
Returned the cleaned abalone to the shells and arrange on the plate. Put ginger, garlic and chilli on top of each abalone.
In a stockpot, bring water to the boil and steam the abalone for 3-5 minutes.
In a saucepan, heat the oil and fry the garlic until fragrant. Add in the scallion and stir-fry for 30 seconds.
Add in the sesame oil and soy sauce. Remove from heat.
Pour over the hot oil on each of the steamed abalone. Garnish with coriander leaves and serve.
